I analyzed your grains that I have bought these days and the dark defects and black edges, it is because the grain could not absorb the heat quickly and thus generating that the heat cannot be transferred to the grains... therefore, not being able to transfer it, it breaks the grains, due to the humidity that tries to come out, to escape from the interior (it's just a chemical process) humidity... The result is burnt grains like the photos I've uploaded. Simply leaving a cup with smoky, burnt, bitter notes... Let's go pure ash... Regarding what you say about your Blend... Well, I'll tell you that a burned grain... is burned... Remember this rule... Toasted yes... Burnt no. (scored). What I have seen is a normal mistake made by people who are just starting to roast... But it is a recurring one, and very harmful because it only confuses in this world where specialty coffee is coming to life..., it confuses between a dark roast... With burnt coffee... And let it be clear that I will not talk about everything I have seen in your place, because I could be talking about your mills, your silos, your coffee maker or even the correct technique for the perfect extraction of coffee, which you have not used. in mine.. By the way.
